Lazy Sunday's

Lazy Sunday's are the best. The girls (my dogs) and I didn't get out of bed until, after 9am today. It was a cloudy. rainy. dreary morning. It was fabulous! When Don finally coaxed us out of bed, I went to weigh myself and I was down 2.5 lbs from last week. I started transitioning to a whole food plant based diet last week.

To start my transition, I started with only my breakfast. I usually have eggs, for breakfast. Last week it was multigrain pancakes with fruit and pure maple syrup. Ya, know they weren't half bad. The thing I like is that you eat until you are full. For the most part I didn't need a snack before lunch.  This week I prepped more pancakes for the mornings I am busy. I am also going to try some smoothies as well. I will let you know how that goes. Also, on top of the breakfasts. This week starts lunches with no meat.  I am a sandwich lover. This may be a bit harder than breakfast. After dinner tonight, I will be prepping black bean and brown rice burritos with homemade salsa. I will let you know how those go. I am a creature of habit and make the same thing for the entire week just switching a few things here and there up. It will definitely be interesting.

Friday, I didn't post anything, because I had a long day at work and I just wanted to relax with the family. Then Saturday, we spend the afternoon with friends. When we rock shopping. Don't get your hopes up, it was rocks for our backyard. :)

I did whip up a quick batch of Cauliflower Chowder. It was delicious. Even, Don said how good it was. 

Tonight, however, will not be such a healthy meal. Don makes the "BEST" meatloaf. I have requested that. before I am no longer eating meat for dinner.  I can't quit eating meat cold turkey. Baby steps. I will be making bakes garlic green beans to go with the meat loaf. Better?

As I said, it was cloudy and rainy most of the weekend. We don't get that weather much here in Phoenix, so I took full advantage of the cooler temps and worked in our garden. I cut some kale. It was really all we had growing well right now. My roma tomato plant has tripled in size and should have tomatoes in no time. I can't wait. I have baby spinach growing too. I love harvesting food and making delicious recipes with what we have grown. It tastes so much better.
